Polenta made of potatoes and Saracen corn

for 6 people
- 3 kilos of potatoes
- 200 grams of Saracen corn
- 200 grams of white flour
- 100 grams of butter

Peel the potatoes and cook in abundant salted water. Drain them, mash them and then place in a pot. Add the butter and then gradually the Saracen corn and the white flour stirring continuously. Cook until the polenta detaches from the pot. Turn the polenta out onto a serving board and serve with pumpkin cream, onions and cream, or with different cheeses, or with rabbit cooked in wine.
