Gnocchi known as “Caiettes”

for 6 people
- a kilo and a half of dry bread
- 1 egg
- 3 spoonfuls of olive oil
- 400 grams of flour
- ˝ litre of milk
- salt, pepper, nutmeg
- chopped blend of rosemary, sage, celery and garlic
- a handful of boiled spinach
(dressing)
- 100 grams of butter
- a chopped blend of herbs (thyme, sage, rosemary)
- 200 grams of pre-cooked sausage

Break the bread into pieces and soak in milk. Add the egg, oil, and salt and mix with flour. Allow to rest for half an hour before adding the herb mixture with the spinach, pepper and nutmeg and mix thoroughly. Then separate the mixture into small pieces the size of a gnocchi ball) and pour into salted, boiling water. Wait until the calhetas rise to the surface and then drain them.
